How the evening runs

Amsterdam eats early — half past six is ordinary, eight is already the later end — and a good many kitchens stop taking orders around half past nine. That catches visitors out more than anything else about the city. In the centre a table is booked rather than chanced. Dress is plain and unbothered: the Jordaan and Oud-West are relaxed, De Pijp is younger and runs later, and nowhere much minds what you arrived in. The arrangement is platonic from the first message onwards, put in plain words at the enquiry so it never needs raising in person.

Getting around

Two things matter. The city is flat and small enough that much of an evening is walked, and the bicycle is not a pastime here but the traffic — the lane between pavement and road is a real one, moving faster than it looks, and stepping into it is the most common way a visitor has a bad moment. Trams and the metro finish somewhere around half past midnight and night buses cover the hours after, running less often than the daytime service, so a late finish is something to plan rather than assume.

When Amsterdam is busiest

The weather is the constant: wet and windy in every season, more often a persistent drizzle than a downpour, so a plan that only works dry is not a plan. May to September is the pleasant, busy window and the terraces are most of the point of it. King's Day at the end of April overrides everything — the whole city is outdoors in orange, the canals fill with boats, and crossing the centre or booking anything inside it is close to impossible. In December the light is gone by half past four, which changes the feel of an early evening more than the temperature does.

Questions about Amsterdam

Do the kitchens really close that early?

Earlier than most visitors expect. A nine o'clock table is late here and a ten o'clock one is often not offered at all, so we suggest a time that leaves the evening somewhere to go afterwards.

Is the centre walkable?

Almost entirely, and flat with it, which makes this one of the easier cities on the list for a long evening on foot. The thing to watch crossing a street is the bike lane rather than the cars.

What happens on King's Day?

The city stops being navigable. It is a wonderful day to be here and a very hard one to hold a booking inside, so we either build the day around it deliberately or move to the day after.

Is any of this romantic or physical?

No — and that's not small print, it's the product. A boyfriend from us is warm, attentive, strictly platonic company. Non-romantic, non-physical, agreed in writing before you meet, and it never changes — whoever asks, whatever's offered.
