Pick a district, not a route
The city is vertical. Two spots that look adjacent on a map can involve a serious climb between them, which is why an evening inside Central, Sheung Wan, Tsim Sha Tsui or Causeway Bay is easier than one that hops between them.
Central is the dressed-up choice and Sheung Wan is a notch more relaxed. Choosing between those two settles most of the rest of the day, including what to wear.
Dinner from half past seven, and then it moves
Dinner from seven-thirty is standard. Tables turn faster than in Europe — nobody is rude about it, it is simply the rhythm — and the evening usually moves on afterwards rather than lingering at the table.
That is worth planning for rather than resisting: the second half of a Hong Kong evening is a separate decision, not an extension of dinner. Say whether you would like one made in advance or left open when you request availability.
What to wear
Business dress is normal in the evening here and never looks out of place, which makes this one of the easier cities to dress for after a working day. Central expects a little more of it; Sheung Wan expects a little less.

The MTR, the typhoon signal, and when to come
The MTR is fast, spotless and runs until around one, and an Octopus card covers it along with most other things. Taxis are plentiful and cheap after that, so a late finish is never the problem — the climb between two points is.
October to December is the best window: dry, warm and clear. Spring is humid, and summer brings real heat and the typhoon season, when a signal can close the city at a few hours' notice. Chinese New Year moves the calendar and shuts a great deal for several days.
